Cowboy Chocolate Pecan Bars Recipe

Ingredients

For the Crust:

• 1½ cups all-purpose flour (Or flour alternative)
• ¼ cup granulated sugar
• ½ tsp salt
• ½ cup unsalted butter, cold and cubed

For the Filling:

• 3 large eggs
• 1 cup packed light brown sugar
• ½ cup corn syrup (Light or dark)
• ¼ cup unsalted butter, melted
• 1 tsp vanilla extract
• ½ tsp salt
• 1 cup semisweet chocolate chips
• 1½ cups chopped pecans (Or half-toasted pecans, half-salted caramel chips for an extra twist!)

Instructions

Prepare the Crust:

1. Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.
2. In a medium bowl, mix flour, sugar, and salt. Cut in cold butter with a pastry cutter (or fingers) until it resembles coarse crumbs.
3. Press evenly into the pan and bake for 15 minutes until lightly golden. Set aside to cool slightly.

Make the Filling:

1. In a large bowl, whisk eggs, brown sugar, corn syrup, melted butter, vanilla, and salt until smooth.
2. Stir in chocolate chips and pecans until evenly combined.
3. Pour over the partially baked crust, spreading evenly.

Bake the Bars:

1. Bake for 25-30 minutes, until the filling is set and slightly puffed. The edges should be golden, and a toothpick inserted in the centre should come out clean.
2. Let cool completely before cutting into squares.
