Recipes from a few of our Lammle’s Western Wear team members
This International Women’s Day, we would like to shine a spotlight on some coveted dishes in the homes of the lovely ladies in our Lammle’s community. Some are long, some are short and sweet, so buckle up and get a pen or a printer close — you’ll want to keep these recipes in your cupboard for future house staples everyone will love!
Kalina’s Stuffed Mushroom Caps:
Hi, I’m Kalina - an Outfitter at Lammle’s. I created this recipe one night while making dinner for my parents, and now It’s a family favourite.
Ingredients:
• Mushroom Caps
• Herb and garlic cream cheese
• Real bacon bits
• A bit of the mushroom stem, chopped
• Very finely chopped green peppers
• Shredded Cheese
Instructions:
Mix it all up and place in your mushroom caps. Top it off with the shredded cheese and bake to perfection!

Trinity’s Chicken Alfredo Spaghetti Squash:
Hello! My name is Trinity and I’m an Outfitter at Lammle’s Western Wear. I love spaghetti squash and chicken alfredo, so one day I decided to make a chicken alfredo recipe from scratch and mix it with some perfectly cooked squash.
Ingredients:
• 1 medium spaghetti squash
• 2 large garlic cloves, minced
• 1 tablespoon oil (for frying)
• ¾ cup chicken broth, low sodium
• 2 teaspoons of cornstarch
• ½ teaspoon salt
• ½ teaspoon ground black pepper
• ½ cup parmesan cheese
• ¾ cup plain greek yogurt
• 2 cups cooked chicken breast shredded
• ¼ cup mozzarella cheese shredded
Instructions:
1. Preheat oven to 375 degrees fahrenheit. Cut spaghetti squash in half lengthwise and scoop out the seeds. Place cut side down on a baking sheet lined with parchment paper and bake for 30-40 minutes or until the skin is dark and glossy, and the inside flakes with a fork. Do not overcook. Set this aside to cool.
2. Meanwhile, preheat a large skillet on medium heat and add oil; add the garlic as well and saute for 1-2 minutes, stirring frequently.
3. Add chicken stock, cornstarch, salt, pepper and whisk until smooth. Bring to a boil, reduce heat to low and simmer for 1-2 more minutes until sauce has thickened a bit.
4. Remove from the heat; add the parmesan cheese and whisk until the cheese has melted and the sauce is smooth. Add the greek yogurt and stir again until smooth. Add chicken and stir to combine.
5. Using a fork, separate the spaghetti squash into strands, leaving them inside the shells. Scoop chicken alfredo filling on top of each shell and gently stir with a fork to make sure the sauce settles into the spaghetti squash. Then top each shell with mozzarella cheese and place in a baking dish. Bake for 10-12 minutes and then broil until golden.
Final touch: Stir the squash with the sauce a bit before serving, and serve hot. Enjoy!

Kierra’s Chocolate Turtle Cookies:
Hey y’all! I’m Kierra and I work as Marketing Support at Lammle’s! This recipe is simple, but they’re insanely good cookies that you can whip up in no time.
Ingredients:
• 1 ¼ cups all-purpose flour
• ¾ cup unsweetened cocoa powder
• ¾ teaspoon baking soda
• ¾ teaspoon kosher salt
• ¾ cup unsalted butter, softened
• ¾ cup packed light brown sugar
• ½ cup granulated sugar
• 1 large egg
• 1 teaspoon vanilla extract
• ¾ finely chopped raw pecans
• 12 soft caramels
Instructions:
1. In a large bowl, whisk flour, cocoa powder, baking soda and salt. In another large bowl, beat butter, brown sugar, and granulated sugar until creamy. Add egg and vanilla and beat until combined. Add dry ingredients and beat on medium low speed until just a few dry streaks remain. Add pecans and fold with a spatula until combined. Cover bowl with plastic wrap and refrigerate until cold, anywhere between 1 and 4 hours.
2. Preheat oven to 350 degrees fahrenheit. Using a large cookie scoop, scoop about ¼ cup of dough into rounds for a total of 12. Press your finger into the center of the dough to create a hole. Place a caramel in the center. Pinch dough back over caramel and roll into a ball. Arrange between 2 parchment-lined baking sheets, spacing 3 inches apart.
3. Bake cookies until puffed and edges are set (about 16 to 18 minutes). Let cool on baking sheets for around 10 minutes (or do what I do and sacrifice a burnt tongue for deliciousness).

Shannon’s Magic Cookie Bars:
Hey! My name is Shannon and I’m a Buyer at Lammle’s. These cookie bars are a must in my house, and are well loved among all my family and friends.
Ingredients:
• 1 ½ cups graham cracker crumbs
• ½ cup butter, melted
• 1 (14 ounce) can of sweetened condensed milk
• 2 cups semisweet chocolate chips
• 1 ⅓ cups flaked coconut
• 1 cup chopped nuts
Instructions:
1. Preheat the oven to 350F, but if using a glass dish preheat the oven to 325F. Coat a 9x13 inch baking dish with cooking spray. Mix graham cracker crumbs and butter in a bowl until well combined. Transfer the mixture to the prepared baking dish and press onto the bottom.
2. Pour sweetened condensed milk on graham cracker crust, then sprinkle with an even layer of chocolate chips, coconut, and nuts. Press all the toppings down firmly with the back of a fork.
3. Bake the bars for about 25 minutes or until lightly browned. Cool completely, then cut into 36 bars or diamonds. Then, of course, serve and enjoy!
